Haryali masala dosa
Haryali masala dosa is a healthy version of our regular potato stuffed masala dosa. Adding spinach, sprouts and peas to the normal stuffing not only enhances the colour but makes it nutritional more sound.

Preparation Method
To make batter
-
Soak udad dal for 3 hr and rice for 8 hr separately.

Drain and grind them to make a batter.

Add curds and leave it to ferment for 8 hr approximately.
For filling
-
Grind peas and spinach coarsely in a mixer.

Heat oil in a kadai. Add jeera and let it crackle. Add chilies, garlic and ginger. Stir fry for a minute.

Add the peas mixture,sprouts and salt. Mix well and sauté for 5 min on a low flame.
To make the dosa

Take a ladle full of the batter. Spread the dosa on to a greased nonstick tawa.

Cook on medium flame. Spread a generous amount of filling into the dosa.

When the side is done it comes off easily. Fold the sides.

Serve hot with sambhar or green chutney
