Hariyali curry

Ingredients List

Ingredients Amount
Mushrooms 3-4 no.
Cauliflower florets 1/2 cup
Baby corn 2-3 no.
Onions 1 no.
Peas 1/2 cup
Red peppers / green peppers 1/2 no.
Oats,rolled 1/4 cup
Spinach small bunch
Ginger chill paste 2 tsp
Green garlic 1-2 no.
Lemon juice 1 tsp
Oil 1 Tbsp

Preparation Method

  • Blanch the spinach and puree. Keep aside
  • Heat the oil in a pan, add in chopped onions and saute for 2-3 min.
  • Add all the vegetables and saute.
  • Add 1/2 cup of water and salt.
  • Add the oats and cook for 5-7 min over a high flame till the vegetables are cooked and oats are soft.
  • Add the ginger chilli, garlic paste and spinach puree and allow to simmer. Serve hot.
  • Garnish with coriander and serve hot.
