Gazpacho Soup is a low cal soup rich in Lycopene, an antioxidant that can guard against cancer, against aging of the skin and can be helpful with diabetes and cardiovascular problems and keeping vision healthy by preventing cataracts.

Tomatoe 4 no.
Onion 1 no.
Capsicum 1/2 no.
Cucumber 1 no.
Celery sticks few
Cornflour 1/2 tsp
Chicken/Vegetable stock 1 1/2 cup
Garlic cloves few
Chilli powder 1 tsp
Salt to taste

Preparation Method

Method:

  • Blanch the tomatoes,remove the skin and puree. Heat the puree in a pan and add cornflour.
  • Add finely Chopped vegetables and celery .
  • Add in chicken/vegetable stock and boil for 2 mins.
  • Add in chilli powder, salt and peper to taste .Garnish with coriander leaves and serve hot or cold.
