Carrot And Mint Salad

Two vitamin A rich ingredients - carrot and mint well combined to make this light salad. Anti - oxidant rich carrots with a punch of mint !

Ingredients Amount
carrots, peeled and thinly sliced 1 cup
cucumber, peeled and thinly sliced 1 cup
kidney beans (rajma), soaked overnight and boiled 1/2 cup
spring onions, sliced 1/2 cup
mint (phudina), finely chopped 2 tbsp
lemon juice 1 tbsp
Salt to taste

Preparation Method
Combine all the ingredients for the salad in a bowl and chill.Just before serving, add the dressing and toss well.Serve immediately.
