Minty carrot salad

Two vitamin A rich ingredients - carrot and mint well combined to make this light salad.

Carrots 2 no.
Cucumber 1 no.
Kidney beans(Rajma) 1/2 cup
Spring onions 1/2 cup
Dressing
Mint(phudina)paste 2 Tbsp
Lemon juice 1 Tbsp
Salt to taste

Preparation Method

  • Soak rajhma overnight. Boil them and drain the excess water.
  • Chop carrot cucumber and spring onions.
  • Combine all the ingredients for the salad in a bowl and chill.
  • Just before serving, add the dressing and toss well.
