Preparation Method

Chop fresh coriander leaves finely. Grate the carrot.

Heat butter in a deep pan, add onion, garlic and saute for two minutes.

Add carrots, coriander and five cups of water. Bring to a boil.

When the carrots are completely cooked, remove from flame and cool the mixture.

Grind the mixture to from a puree.

Take the puree again in a deep pan boil until you reach the desired consistency. Add salt and pepper to taste.

Serve hot garnished with coriander leaves.
