Carrot coriander soup

Enjoy this nourishing soup which is rich in folate, thiamine, riboflavin, vitamin B6, carotenoids, tryptophan, vitamin K, manganese, calcium and iron.

Ingredients List

Ingredients Amount
Carrots 3 no.
Fresh coriander leaves 1/2 cup
Butter 2 tsp
Black pepper 1 tsp
Onion 1 no.
Garlic 2-3 clove
Salt to taste

Preparation Method

  • Chop fresh coriander leaves finely. Grate the carrot.
  • Heat butter in a deep pan, add onion, garlic and saute for two minutes.
  • Add carrots, coriander and five cups of water. Bring to a boil.
  • When the carrots are completely cooked, remove from flame and cool the mixture.
  • Grind the mixture to from a puree.
  • Take the puree again in a deep pan boil until you reach the desired consistency. Add salt and pepper to taste.
  • Serve hot garnished with coriander leaves.
